Peach Mojito
There is no cocktail quite as cool and refreshing as this Peach Mojito. It is sweet from the fresh peaches in a subtle way, while the mint, lime, and club soda keep it light, bubbly, and perfect for a hot summer day.
After the first sip, you may just crown this the queen of your favorite summertime cocktails!

A Little Sip of Summer
If you have followed me for a while, you know I ended up with 20 pounds of peaches. Naturally, I have been making every cocktail and appetizer I can think of to use up those lovely Georgia peaches.
Along with this mojito, fresh peaches are also delicious in my Peach Bellini, Peach Margarita, or Fresh Peach Salsa.
I have to say, my favorite thing I have made so far is this Peach Mojito.
Mojitos are already such a classic, yummy cocktail, but the addition of fresh peach makes them even better. Ripe peaches add just enough sweetness without making the drink feel heavy.
Then you get the bright lime, cool mint, smooth rum, and a bubbly splash of club soda. It really is summertime in a glass.
Grow a Little Cocktail Garden
You do not need a big garden to grow a few cocktail herbs. Hopefully, you have space for a pot or two!
A cocktail garden can start with herbs like basil, thyme, rosemary, lavender, and definitely mint. I also love growing nasturtiums because they are edible and look so beautiful in a cocktail or alongside an appetizer.
Mint is one herb you will want to keep in a pot because it can take over your whole garden space. Once you have that lovely pot of mint growing, you can mix up this Peach Mojito all summer long.
You can also put extra mint to use in a cucumber mojito or my watermelon mojito.
Of course, you can also go to the grocer, buy a nice bunch of mint, and start mixing!

Ingredients You’ll Need
This fruity twist on a classic mojito uses just a few fresh, summery ingredients.
- Fresh peach: Use a ripe, juicy peach for the best flavor. Save one or two slices for the garnish.
- White rum: I used Bacardi white rum. Rum is such a fun liquor that is easy to drink and just makes me happy!
- Lime juice: Fresh lime juice adds brightness and balances the sweetness of the peach.
- Sugar: Traditional mojitos use sugar, but agave or honey can be substituted.
- Fresh mint: You will need about ten leaves for muddling, plus a couple of sprigs for garnish.
- Club soda: This adds the light, refreshing bubbles.
- Ice: Fill the glass generously so the mojito stays extra cold.

How to Make a Peach Mojito
Start by getting out your blender.
Add the chopped peach, rum, lime juice, and sugar. Blend everything together until the peach is smooth.
Set that mixture aside while you prepare the glass.
Add about ten mint leaves to the bottom of a large cocktail glass. Squeeze in a little lime juice, then muddle the mint well to release its fresh flavor.
You can use a muddler, but the back of a spoon will work in a pinch.
Fill the glass with ice, pour in the peach mixture, and top everything off with club soda. Give it a gentle stir so the peach and mint flavors are mixed throughout the drink.

Make the Garnish Extra Pretty
For a simple garnish, add a couple of fresh peach slices and a few sprigs of mint.
That alone makes a beautiful cocktail.
To get a little extra fancy, add peachy shades of edible nasturtiums. The orange, yellow, and deep red flowers look incredible against the golden peach drink and fresh green mint.
Just be sure any flowers you use are edible and have not been treated with pesticides.

Tips for the Best Peach Mojito
Use a soft, ripe peach that smells sweet and gives slightly when pressed. Since the peach provides most of the fruity flavor, an underripe peach will not give you the same juicy result.
Taste the blended peach mixture before adding it to the glass. Peaches vary in sweetness, so you may want a little more lime or a touch more sugar.
Add the club soda last and stir gently. This keeps the drink bubbly instead of flattening it.
For an extra-cold mojito, chill your glass before mixing the drink.
Easy Variations
You can adjust this Peach Mojito depending on what you have on hand.
Replace the sugar with agave or honey for a slightly different sweetness.
For a frozen Peach Mojito, blend the peach mixture with a generous handful of ice before pouring it into the glass.
To make a peach mojito mocktail, leave out the rum and add a little more club soda. You can also use sparkling water or a lemon-lime soda for a sweeter version.

Peaches are at their prime for only a few months, so it is fun to take advantage of these sweet and delicious stone fruits while you can.

Equipment
- 1 Blender
- 1 Muddler You could use the back of a spoon if needed
Ingredients
- 1 Med Peach Chopped – Save 2 Slices for Garnish
- 2 Oz Bacardi White Rum
- 1 Oz Lime Juice 1-2 Limes – Save Lime Shells to adda squeeze to mint to muddle in glass
- 1 Tsp Sugar
- 10 Mint Leaves plus 2 sprigs for garnish
- 2-4 Oz Club Soda
Instructions
- Add chopped Peach, Rum, Lime Juice and Sugar to a blender and mix
- Muddle Mint Leaves with a squeeze of lime in bottom of large cocktail glass
- Add ice to glass then pour in Peach Mixture and top off with Club Soda
- Garnish with two sprigs of Mint Leaves and one or two slices of Peaches
