I picked up a big box of fresh peaches from the Fruit Truck and immediately started slicing and freezing them so I could enjoy drinks like this all summer.

To make the puree:

  1. Peel and chop 3 to 4 ripe peaches.
  2. Add them to a blender.
  3. Pour in a small splash of water.
  4. Add about ⅛ cup sugar.
  5. Squeeze in the juice from half a lemon.
  6. Blend until completely smooth.

Store the puree in the refrigerator for up to two weeks, making it easy to mix up Peach Margaritas whenever the mood strikes.

If you end up buying more peaches than you can use, freeze them for later. Simply slice the peaches, arrange them on a baking sheet for a flash freeze, then transfer the frozen slices to a freezer bag. They’ll stay separate and won’t freeze into one large clump.

Equipment

Ingredients
  

  • 2 Ozs Silver Tequila
  • 1 Oz Cointreau
  • 1 Oz Fresh Squeezed Lime Juice About 1 Lime
  • 2 Oz Peach Puree

Instructions
 

  • Add all ingredients to a cocktail shaker filled with ice and shake for 20 seconds
  • Pour into a Margarita Glass filled with ice
  • Garnish with a fresh peach slice

Garnish

  • If you like a sweet cocktail just take a lime and rim your glass then dip into sugar – I like to do this just 3/4 of the way around

Peach Puree

  • Peel and chop about 3-4 fresh peaches and add to blender
  • Add a splash of Water, 1/8 or so of sugar and the juice from 1/2 Lemon and puree till smooth
  • Refrigerate for up to two weeks
