Ingredients You’ll Need
For the Peach Bellini
- 2 ounces fresh peach puree
- 1 ounce peach liqueur (optional but highly recommended)
- 4 ounces chilled Prosecco
- Fresh peach slice for garnish
For the Peach Puree
- 3–4 ripe peaches, peeled and sliced
- Splash of water
- â…› cup sugar (add more if you prefer a sweeter puree)
- 1 tablespoon fresh lemon juice

How to Make It
Start by making the peach puree.
Add the peeled peaches, water, sugar, and fresh lemon juice to a blender.
Blend until completely smooth.
Transfer the puree to the refrigerator and chill before making your cocktails. The puree will keep well for one to two weeks, so you’ll have plenty left for another batch or to use in other peach cocktails throughout the week.

If you’re adding peach liqueur, pour it into a cocktail shaker along with the peach puree and a little ice. Shake until well chilled.
Pour the mixture into a champagne flute.
Slowly top with chilled Prosecco, allowing the bubbles to gently combine with the puree.

Equipment
- 1 Blender
- 1 Juicer
Ingredients
- 2 Ounces Peach Puree
- 1 Ounce Peach Liquor
- 4 Ounces Prosecco
Peach Puree
- 3-4 Peeled and Sliced Fresh Peaches
- 1 Splash Water
- 1/8 Cup Sugar More if you like sweet
- 1 TB Fresh Lemon Juice
Instructions
- Blend all ingredients for the Peach Puree – keep this in the frig till ready to use
- Add Peach Liquor and Peach Puree to a Cocktail Shaker with a bit of ice to chill
- Add chilled Puree to Champagne Flute and top off with approx 4 Oz of Prosecco
- Garnish with a slice of Peach
