The stars of this drink are undoubtedly the mint and watermelon.
Begin by pureeing a generous amount of watermelon in your blender. While some might prefer to strain the juice, I find it delicious and more flavorful unstrained—it also makes your life easier.
If you’ve never made a mojito before, you’ll need to muddle about 6-8 mint leaves in the bottom of your glass with lime juice and a bit of agave nectar. Muddling helps release all the oils from the mint leaves, enhancing the drink with wonderful mint flavors.
Don’t worry if you don’t have a fancy muddler; the back of a spoon will work just fine.
Mixing the Drink
Fill your glass with ice, add your light rum and watermelon juice, then top it off with a big, refreshing splash of club soda.

Watermelon Mojito
Equipment
- 1 Blender
Ingredients
- 1 Lg Wedge Watermelon Pureed in Blender 3 Oz per Drink
- 1 Lime Juiced About 3/4 OZ
- 6-8 Leaves Mint
- 1 TB Agave Nectar
- 2 Oz White Rum
- 1 Oz Club Soda Just top off glass
Garnish
- 1 Small Wedge of Watermelon
- 1 Sprig Mint Leaves
Instructions
- Cut up about 2 cups of Watermelon and Puree until smooth in a blender
- Muddle 6-8 Mint leaves in the bottom of a glass with 3/4 Oz Lime Juice and 1 TB Agave Nectar
- Fill glass with ice then add 2 Oz White Rum and 3 Oz Watermelon Puree
- Top off with big splash of Club Soda and mix well
- Garnish with small Watermelon Wedge and a sprig of mint leaves
