Prosciutto Wrapped Asparagus

Today I just made an appetizer that I could eat every day of my life – Prosciutto Wrapped Asparagus! These little spears are so tasty, fun to eat, and easy to prepare! If you need a nice and light but super quick and easy appetizer for Easter, look no further!

Follow these simple steps to make this elegant and effortless appetizer come to life!

Choosing the Right Asparagus

When making this appetizer, you want to choose asparagus that is a little thicker so it can hold up to being wrapped and cooked. You need to clean and trim your asparagus.

My sister Fran taught me a trick years ago where you take either end of the asparagus spear and snap it—it will naturally snap off at the woody end! So because we are serving this to guests, I snapped the first one and cut all the others at the same point so they look uniform on the platter!

Flavor Comes First

Next, all you do is put the spears in a bowl and coat with olive oil, fresh lemon juice, salt, pepper, basil, and red pepper flakes. You also add a tablespoon of good Parmigiano Reggiano.

Please don’t use Kraft Parm—it’s filled with chemicals. Good Parm is easy to find these days. If you aren’t lucky like me to have an Italian deli, your grocery store should have a specialty cheese section where you can find a bag of good Parmesan cheese!

That being said, don’t add too much salt as the Parm is salty, as is the prosciutto.

Wrapping Things Up

You need about 3 oz of thinly sliced prosciutto for about 16 spears of asparagus. Cut each slice the long way and wrap around the coated asparagus.

Place these lovely spears on a foil-coated pan, drizzle with any remaining marinade left in the bowl, and pop them in a 425-degree oven for 12 minutes!

A Finishing Touch That Makes It Special

After you remove these gorgeous and elegant apps from the oven, the little secret of mine to put them over the top is to drizzle them with balsamic glaze! I love this stuff and it really elevates your veggies!

Make-Ahead Magic

If you are having a party or the holiday, you can easily make these the day ahead and place them right on a foil-lined pan and cover it with plastic wrap. Bring to room temp and just cook right before your guests arrive!

A Perfect Pairing for Easter

Set up your bar station! Here are the mixing instructions…

Prep Like a Pro

  • Trim thick asparagus spears and use the snap method to remove woody ends.
  • Toss with olive oil, lemon juice, salt, red pepper flakes, black pepper, basil, and Parmigiano Reggiano.

Wrap and Roast

  • Slice prosciutto lengthwise and spiral-wrap around each spear.
  • Roast on a foil-lined baking sheet at 425°F for 12 minutes.

Drizzle and Serve

  • Finish with a generous drizzle of balsamic glaze.
  • Serve warm and watch them disappear!

Equipment

  • 1 Foil Lined Baking Sheet

Ingredients
  

  • 16 Thick Asparagus Spears Cleaned and trimmed of the woody bottom- You want to choose asparagus that is a bit thicker – thin rods will get too wilty
  • 2 TB Olive Oil
  • 2 Wedges Fresh Lemon Squeezed
  • 1/4 Tsp Salt
  • 1/4 Tsp Red Pepper Flakes
  • 3 Cranks Fresh Pepper
  • 1/2 Tsp Dried Basil
  • 1 TB Parmasen Cheese
  • 8 Slices Prosciutto Sliced in half the long way

Garnish

  • Drizzle Balsamic Glaze over the plated Spears

Instructions
 

  • Preheat oven to 425 Degrees
  • Trim and clean asparagus and toss in a bowl with all ingredients besides Prosciutto and Glaze
  • Cut Prosciutto in half the long way and wrap each dressed spear in a spiral fashion down the length of the spear
  • Place asparagus on a foil lined pan and bake for 12 minutes
  • Place cooked asparagus on a serving dish and drizzle with the Glaze and serve hot!
