Peach Salsa
There’s nothing like a juicy, sweet summertime peach! I can eat one every day when they’re ripe and yummy. Since I scored 20 pounds of peaches from the Georgia Food Truck, I literally have been eating them every day—lol!
I’m also trying new and different ways to use them, and this peach salsa is the perfect summertime snack. It’s savory, spicy, bright, and juicy, with just enough sweetness from the fresh peaches.

Making salsa from scratch is very easy to do. You just need fresh produce, a little chopping time, and a big bowl for mixing everything together.
This is also one of those recipes you can easily alter to your taste. I generally like my salsa at medium heat, but you can make it milder by removing the pepper seeds or turn things up by adding another hot pepper.
The sweet peaches are so good with the juicy tomatoes, crunchy peppers, red onion, garlic, black beans, and fresh lime. Every bite has a little sweet, savory, spicy, and tangy flavor.
And the colors are gorgeous! This salsa is definitely pretty enough for summer entertaining.

Ingredients You’ll Need

You’ll need two large, ripe peaches. I leave the skin on and dice them into small squares.
A pint of cherry tomatoes adds plenty of fresh, juicy flavor. I like using a tri-color pint because it makes for a prettier salsa, but any ripe cherry tomatoes will work.
For the peppers, I use orange bell pepper, two hot peppers, and one jalapeño. Calabrian peppers, Aji chilies, or serranos are all good choices.
I usually choose a red, orange, or yellow bell pepper because they are milder and a little sweeter than green bell peppers.
You’ll also need:
- Red onion
- Fresh garlic
- Black beans
- Fresh parsley or cilantro
- Freshly squeezed lime juice
- Cumin
- Paprika
- Sea salt
- Freshly ground pepper
I used fresh parsley from my garden instead of cilantro. You can absolutely use cilantro or a combination of both. With all that fresh lime, I didn’t miss the cilantro flavor.


How to Make Peach Salsa
The most time-consuming part of this recipe is the chopping, but even that is easy.
First, finely dice the peppers, red onion, and garlic. You want the pieces small so you get a little bit of everything in each scoop.
When chopping the hot peppers, remove the seeds for less heat. I usually keep them in because I like spice!
Dice the peaches into small squares. Keep the pieces bite-sized so they are easy to scoop with a tortilla chip.
Chop the cherry tomatoes and add them to a medium bowl along with the peaches, peppers, onion, and garlic.
Rinse and drain the black beans before adding them. I only used about one-third of the can, but that part is completely up to you.

Add the chopped parsley, freshly squeezed lime juice, cumin, paprika, salt, and pepper.
Fresh-squeezed lime is a must. It gives the salsa the acid and freshness it needs, so don’t substitute it. Rolling the limes firmly on the counter before cutting them can help release more juice.
Once everything is in the bowl, mix it well. That’s it—now you can start dipping!
Tips for the Best Results
Use peaches that are ripe and juicy but still firm enough to dice. Very soft peaches taste wonderful, but they can turn mushy when stirred with the other ingredients.
Try to chop everything into similarly small pieces. This makes the salsa easier to scoop and gives you the best mix of flavors in every bite.

Taste the salsa after mixing and adjust it to your liking. Add another pepper for more heat, extra lime for brightness, or another pinch of salt if the flavors need a little boost.
You can eat it immediately—and of course, I was immediately dipping my chips into this yummy combo of garden-fresh goodness! However, letting it chill for a few hours gives all those flavors time to blend together.
What to Serve With Peach Salsa
This peach salsa is delicious served simply with tortilla chips, but there are plenty of other ways to use it.
Spoon it over fish for a fresh and colorful summer dinner. It would be especially good with grilled white fish, salmon, or shrimp.
You can also serve it with tacos, grilled chicken, or a simple rice bowl. The black beans make it hearty enough to work as more than just a dip.
For a party, set it out with a big bowl of chips and let everyone dig in.

You can also transfer the salsa to Mason jars for easy refrigerator storage. Keep it chilled in a tightly covered container and enjoy it while the ingredients are fresh and crisp.

Peach Salsa
Equipment
- 2 Med Mason Jars
Ingredients
- 2 Ripe Peaches – diced in small squares I kept skin on
- 1/2 Orange Bell Pepper – finely diced
- 2 Hot Peppers – Calabrian, Aji Chilies, Serranos-finely diced remove seeds to cut down on spice
- 1 Jalapeno – finely diced remove seeds to cut down on spice
- 1/2 Red Onion – finely diced
- 2 Limes Juiced – about 3 TB Roll the limes to produce more juice
- 3 Large Garlic Cloves – finely diced
- 1 Pint Tri-Color Cherry Tomatoes Diced
- 3 TB Fresh Parsley or combo with Cilantro I used Parsley from my garden to be safe and no cilantro
- 3 Heaping TB Black Beans – Rinsed and Drained
- 1 Tsp Cumin
- 1 Tsp Paprika
- 1 Tsp Sea Salt & Fresh Ground Pepper
Instructions
- Chop and Dice all ingredients and add to med Bowl
- Add Lime and spices and mix well
- Transfer to Mason Jars to store up to two weeks or so in refrigerator
