Grilled Cantina Watermelon Recipe
Watermelon is the quintessential fruit of the summer! I would say that Watermelon is the number one fruit served on the Fourth of July. So, we could serve melon just sliced, but that would be boring! Introduction to Grilled Cantina Watermelon
If you’ve never had grilled watermelon, you are in for a treat. There are many different recipes and versions that you can make. I tried to combine a couple of different versions and came up with this incredibly delicious recipe that I call Cantina Watermelon.
Watermelon is so versatile that you can prepare it in many different ways and use it in cocktails as well! You can slice it, dice it, freeze it, blend it, and grill it!
Whatever you do, make sure you use it as much as you can during this sunny season because it’s at its best when the sun is shining bright, and the temps are high!
Picking the Perfect Watermelon
The key to picking a good melon is the color. When I’m making recipes or drinks, I like to use a seedless melon.
Look for a nice dark green color that is dull, not shiny. There should be no soft spots or nicks on the skin. Also, look for a yellow spot on the bottom.
If the spot is white, that means the melon is not ripe and didn’t sit on the vine long enough! You want a nice juicy melon that is a beautiful dark pinky red when you cut into it! Yummmmm 🙂
Grilled Cantina Watermelon Recipe
Instructions
- Prepare the Grill:
- Oil the racks on the grill and heat to medium-high.
- Prepare the Watermelon:
- Slice the watermelon into 1-inch thick triangle shapes.
- Juice the two limes and mix the juice with 1 tablespoon of agave nectar.
- Grill the Watermelon:
- Baste all sides of the watermelon with the lime-agave mixture.
- Place the watermelon on the hot grill and cook until char marks appear on both sides.
- Add Toppings:
- Remove the watermelon from the grill.
- Top with cojita cheese and sprinkle generously with Tajin spice.
- Serve:
- Serve the grilled watermelon warm.
Conclusion
The tiny bit of agave helps caramelize the melon, and the sweetness with the Cojita cheese is a show-stopping combination! Then, of course, the spiciness of the Tajin puts this over-the-top yummy! No need to make a complete Mexican fare in order to enjoy this Grilled Cantina Watermelon. It goes with anything that you’d be grilling this holiday weekend.

Grilled Cantina Watermelon
Equipment
- 1 Grill
Ingredients
- 1 Seedless Watermelon cut in 1 inch thick triangles
- 2 Juiced Limes
- 1 TB Agave Nectar
- 2 TB Cojita Cheese
- Tajin sprinkled on all sides
Instructions
- Oil racks on grill and heat to med high
- Slice watermelon in triangle shapes one inch thick
- Juice two limes and mix juice with 1 TB Agave nectar
- Baste all sides with juice then grill on hot grill to get char marks on both sides of the melon pieces
- Top hot watermelon with Cojita Cheese and sprinkle generously with Tajin Spice
- Serve Warm
