Zucchini Balls
I have to say I’m quite a lucky girl to have such good friends! My besties Michelle and Chuck are not only great friends but have the most amazing garden. Because they love me, they adorn me with armloads of gorgeous veggies every summer. My favorite thing they give me is tons of zucchini! I love zucchini and am always looking for new ways to serve it. Well, I just came up with these Zucchini Balls, and they are quite delicious!
As usual, I like my recipes to be quick and easy, and this one follows suit.

The Versatility of Zucchini
Zucchini is one of those veggies that can triple in size overnight if you turn your back! If you happen to have a large squash on hand, this is a great way to use it.
If you are going to the store, it may be hard to find a large one, so just get 3-5 small ones because you need about a cup of shredded squash.
Prepping the Zucchini
You start by shredding the zucchini. Zucchini has a lot of water in it, and it will make mushy balls unless you squeeze out the moisture.
After you shred it, just put it between paper towels and push down a few times until you’ve squeezed out all the moisture.
Mixing the Ingredients
Then you just add all your ingredients, which are breadcrumbs, grated Romano or Parmesan cheese, finely diced onion, a couple of cloves of minced garlic, a touch of red pepper flakes, one egg, and the secret ingredient of dry Ranch Dip Mix.
This gives them great flavor. I buy Hidden Valley Ranch Dip in the packets.
You can always just save the leftover for next time or mix it up with some sour cream for a veggie dip.
Shaping and Baking
Next, shape them into small bite-sized balls and place them on a parchment-lined sheet.
Bake these at 400 degrees for 15-20 minutes, and soon you’ll be dipping these in ranch and won’t stop until they disappear!

Zucchini Bites
Equipment
- 1 Baking Pan lined with Parchment
- 1 Box Grater or Food Processor
Ingredients
- 1 Lg Zucchini or 3 Small 1 cup shredded
- 1/4 Cup Italian Breadcrumbs
- 1/4 Cup Grated Romano Cheese
- 1/4 Cup Finely minced onion
- 1 Clove Minced Garlic
- 1/4 Tsp Basil
- 1/4 Tsp Oregano
- 1/4 Tsp Red Pepper Flake
- 1 TB Ranch Dip Mix
- 1 Egg Whisked
- Salt & Pepper
Instructions
- Shred large zucchini to get approximately 1 cup
- Put between paper towels and push out all the moisture
- Add all ingredients to bowl with zucchini and mix well
- Shape into small one inch balls and place on parchment lined baking sheet
- Bake in preheated oven at 400 degrees for 15-20 minutes
- Serve warm zucchini Balls with Ranch Dressing
