Berry Bruschetta Appetizer
Memorial Day is a time to remember and thank those who have served our country and have risked their lives for ours! A nice way to show tribute to those we love is by serving good food, drinks, and family gatherings.
Memorial Day for some is also a kick-off to summer and this appetizer is so perfect for this occasion!
Not only is it Red, White, and Blue but it is also a wonderful combination of sweet summer berries and creamy fresh lemon ricotta cheese.
This fresh and beautiful combination is then served on a little baguette toast that is sure to please your guests and family!
The Perfect Start to Summer
Not only is this a pretty little combination, but it is also quick and super easy to make!
Just slice up a baguette and brush it with some olive oil to make Bruschetta toasts.
You then just zest a little lemon into some ricotta cheese and top with a luscious combination of strawberries, blueberries, and fresh basil, then drizzle it all in balsamic vinegar!
Oh man, is this yummy and just perfect for this holiday weekend!
Make-Ahead Tips
You can always make the toasts the night before and just store them in a Ziploc bag.
Assembling the Bruschetta the next day will seriously take you less than ten minutes but will look like a dramatic, beautiful appetizer.

Recipe: Berry Bruschetta Appetizer

Equipment Needed
- 1 Pan to bake baguette toasts
- 1 Zester for lemon
Ingredients
- 1 Cup Ricotta Cheese
- 1 Lemon Zested to equal approx 1 tsp
- 2-4 Large Strawberries, sliced and quartered
- 1/2 Cup Blueberries
- 2 TB Finely Chopped Fresh Basil
- 1 Sliced Baguette – Sliced in 1/2 inch thick slices to toast
- 2 TB Olive Oil, brushed on sliced toast
- Reduced Balsamic Vinegar, drizzled over top
Instructions
- Prepare the Toasts: Slice baguette into 1/2″ slices and brush with olive oil, then bake for 10 minutes.
- Mix the Ricotta: Zest lemon into ricotta cheese, mix well and set aside.
- Combine Berries and Basil: Chop strawberries into quartered slices and mix with blueberries and chopped basil.
- Assemble the Bruschetta: Once the toasts have cooled, spread about 1 tsp or so of ricotta cheese on each toast and top with the berry and basil mixture.
- Final Touch: Drizzle lightly with reduced balsamic vinegar and serve!

Berry Bruchetta
Equipment
- 1 Pan to bake baguette toasts
- 1 Zester for lemon
Ingredients
- 1 Cup Ricotta Cheese
- 1 Lemon Zested to equal approx 1 tsp

- 1/2 Cup Blueberries
