Berry Bruchetta

Strawberries, Blueberries and Basil on a bed of creamy lemon ricotta cheese and drizzled with balsamic vinegar

Equipment

  • 1 Pan to bake baguette toasts
  • 1 Zester for lemon

Ingredients
  

  • 1 Cup Ricotta Cheese
  • 1 Lemon Zested to equal approx 1 tsp
  • 2-4 Large Strawberries Sliced and quartered
  • 1/2 Cup Blueberries
  • 2 TB Finely Chopped Fresh Basil
  • 1 Sliced Baguette - Sliced in 1/2 inch thick slices to toast
  • 2 TB Olive Oil brushed on sliced toasts
  • Reduced Balsamic Vinegar Drizzled over top

Instructions
 

  • Slice baguette in 1/2" slices and brush with Olive Oil then bake for 10 minutes
  • Zest lemon into ricotta cheese, mix well and set aside
  • Chop Strawberries in quartered slices and mix with Blueberries and chopped Basil
  • Once toasts have cooled spread about 1 tsp or so of ricotta cheese on each toast and top with berry and basil mixture
  • Drizzle lightly with Reduced Balsamic Vinegar and serve!
