With Summer around the corner, we all feel the need to be more social! I love getting together on a sunny Sunday afternoon with the girls. The Strawberry Rhubarb Sparkler is the perfect light cocktail to sip on in the sun with your friends. It hardly takes any prep and is light and refreshing and what girl pal doesn’t like a little bubbly?!

Speaking of girl pals, my girlfriend Michelle is the reason I came up with this cocktail. Michelle has the most amazing garden you’ve ever seen and she just gifted me an armload of beautiful freshly picked rhubarb.

What’s a girl to do but come up with some kind of delicious cocktail? I happened to have strawberries in the fridge, so voila—the Strawberry Rhubarb Sparkler was born!

How to Make Strawberry Rhubarb Simple Syrup

Ingredients

  • 2 cups chopped fresh rhubarb
  • 2 cups chopped fresh strawberries
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Combine Ingredients: Add sugar and water to a medium saucepan and stir to dissolve.
  2. Add Fruit: Add chopped rhubarb and strawberries, bring to a boil, then reduce to a simmer for about 15 minutes.
  3. Mash and Thicken: As the mixture cooks, gently mash the fruits to release their flavors. Continue to simmer until the mixture thickens.
  4. Strain and Store: Remove from heat and strain the mixture through a fine mesh sieve. Let the syrup cool and then store it in the refrigerator for up to one month.

  • 1 bottle Brut Champagne or Prosecco (Korbel or La Marca recommended)
  • Strawberry Rhubarb Simple Syrup
  • Fresh strawberries for garnish

  1. Prepare the Glass: Pour about an ounce of Strawberry Rhubarb Simple Syrup into the bottom of a flute glass.
  2. Add Bubbly: Fill the glass to the top with your choice of dry Champagne or Prosecco.
  3. Garnish and Serve: Garnish with a fresh strawberry slice and enjoy the sunshine!

Equipment

  • 1 Med Sauce Pan
  • 1 Potato Masher To smush the strawberries and rhubarb as they cook
  • 1 Mesh Sieve To strain fruit

Ingredients
  

  • 1 Bottle Brut Champagne or Prosecco Korbel or La Marca

Simple Syrup

  • 2 Cups Chopped Fresh Rhubarb
  • 2 Cups Chopped Fresh Strawberries
  • 1 Cup Sugar
  • 1 Cup Water

Instructions
 

  • Add Sugar to water in a medium sauce pan and stir to dissolve
  • Add chopped fruit and bring to a boil then turn down and simmer for about 15 minutes
  • Smush fruit occasionally to break it down while cooking
  • Simmer till thickened
  • Remove from heat and strain mixture through a fine mesh sieve into a jar to cool and store in the frig for up to one month

Cocktail

  • Pour about an ounce of Strawberry Rhubarb Simple Syrup into the bottom of a flute glass
  • Top with your choice of Bubbly
  • Garnish with a strawberry
