Strawberry Rhubarb Sparkler
A Mimosa type drink made with homemade Strawberry Rhubarb Simple Syrup topped off with Champagne

- 1 Bottle Brut Champagne or Prosecco Korbel or La Marca
Simple Syrup
- 2 Cups Chopped Fresh Rhubarb
- 2 Cups Chopped Fresh Strawberries
- 1 Cup Sugar
- 1 Cup Water
Add Sugar to water in a medium sauce pan and stir to dissolve
Add chopped fruit and bring to a boil then turn down and simmer for about 15 minutes
Smush fruit occasionally to break it down while cooking
Simmer till thickened
Remove from heat and strain mixture through a fine mesh sieve into a jar to cool and store in the frig for up to one month
Cocktail
Pour about an ounce of Strawberry Rhubarb Simple Syrup into the bottom of a flute glass
Top with your choice of Bubbly
Garnish with a strawberry
