These adorable Caprese Phyllo Cups! Even if you’re heading out, consider whipping up these delights as a light appetizer before your evening.

Ingredients

  • 1 Pint Cherry Tomatoes, diced small
  • 1/2 Bunch Fresh Basil, minced
  • 2-3 Cloves Minced Garlic
  • 1/4 Tsp Dried Basil, Oregano, and a sprinkle of garlic powder
  • Salt and Pepper to taste
  • 1 Package Phyllo Cups (or Bruschetta Toasts or toasted sliced Italian bread)
  • 2 TB Olive Oil
  • 1 Bottle Reduced Balsamic Vinegar
  • 1 Log Pre-Sliced Fresh Mozzarella Cheese (Found by the specialty cheeses in your produce section – if you can’t find sliced, just buy the medium balls, which are called bocconcini, and slice them yourself)

Instructions

1. Prepare the Cheese Hearts

Start by cutting the pre-sliced fresh mozzarella into heart shapes using a small heart-shaped cookie cutter. Set aside these adorable cheese hearts.

2. Thaw Phyllo Cups

Remove the phyllo cups from the freezer and let them thaw, getting them ready for the delicious filling.

  • 1 Small Heart Shaped Cookie Cutter

Ingredients
  

  • 1 Pint Cherry Tomatoes diced small
  • 1/2 Bunch Fresh Basil- minced
  • 2-3 Cloves Minced Garlic
  • 1/4 Tsp Dried Basil, Oregano and a sprinkle of garlic powder
  • Salt and Pepper to taste
  • 1 Package Phyllo Cups Or Bruchetta Toasts or toasted sliced italian bread
  • 2 TB Olive Oil
  • 1 Bottle Reduced Balsamic Vinegar
  • 1 Log Pre-Sliced Fresh Mozzarella Cheese Found by the specialty cheeses in your produce section – if you can't find sliced just buy the medium balls which are called bocconcini or whatever size is appropriate for your cookie cutter and slice them yourself

Instructions
 

  • Cut your fresh mozzarella in heart shapes and set aside
  • Take phyllo cups out of freezer to thaw
  • Finely dice tomatoes, basil, garlic and toss with OO and spices
  • Fill each cup with tomato mixture which is about a teaspoon and top with a cheese heart
  • By waving your hand above the prepared cups lightly drizzle the balsamic back and forth to make pretty stripes across your cups
