Caprese Phyllo Cups With Hearts

A delicious mixture of tomato, garlic, fresh basil in a phyllo cup then topped with a mozzarella heart and drizzled ever so lightly with reduced balsamic vinegar

Equipment

  • 1 Small Heart Shaped Cookie Cutter

Ingredients
  

  • 1 Pint Cherry Tomatoes diced small
  • 1/2 Bunch Fresh Basil- minced
  • 2-3 Cloves Minced Garlic
  • 1/4 Tsp Dried Basil, Oregano and a sprinkle of garlic powder
  • Salt and Pepper to taste
  • 1 Package Phyllo Cups Or Bruchetta Toasts or toasted sliced italian bread
  • 2 TB Olive Oil
  • 1 Bottle Reduced Balsamic Vinegar
  • 1 Log Pre-Sliced Fresh Mozzarella Cheese Found by the specialty cheeses in your produce section - if you can't find sliced just buy the medium balls which are called bocconcini or whatever size is appropriate for your cookie cutter and slice them yourself

Instructions
 

  • Cut your fresh mozzarella in heart shapes and set aside
  • Take phyllo cups out of freezer to thaw
  • Finely dice tomatoes, basil, garlic and toss with OO and spices
  • Fill each cup with tomato mixture which is about a teaspoon and top with a cheese heart
  • By waving your hand above the prepared cups lightly drizzle the balsamic back and forth to make pretty stripes across your cups
