Today is August 1st and I couldn’t think of a better way to welcome the heat of August than with this Cucumber Mojito! As if a Classic Mojito wasn’t delicious enough, wait till you taste the Cucumber Mojito! The addition of the muddled cucumber brings this cocktail to a whole new level of refreshing and craveability!

So if you’re trying to be healthy but still want your summertime sippers, this cocktail can sub for your green juice any day! LOL! If you don’t have a garden, you can simply go to the market for mint and cucumbers.

But keep this in mind for next year — even if you don’t want to have a full garden, you can grow a Cocktail Garden! Perfect idea, right?? In this garden, I would suggest basil, rosemary, thyme, and mint.

If you have the room, also do a cherry tomato plant and patio cucumbers. You can put them in individual pots — which you definitely want to do with mint because it spreads like crazy, and the other herbs will take on a mint flavor!

Start with Fresh Ingredients

The beauty of a mojito lies in its simplicity — but freshness is key. This version levels up the classic with crisp, hydrating cucumber, making it even more refreshing for summer.

  • Cucumber: A medium cucumber goes a long way. Use some for muddling and a few slices to line the glass and garnish. Using a mandoline makes it super easy to get ultra-thin slices that stick perfectly inside the glass.
  • Mint: Tear your mint leaves instead of chopping — this helps release the essential oils without bruising them too much.
  • Lime & Sugar: Fresh lime juice is a must. Combine it with a bit of sugar or simple syrup — the cucumber has enough water content to help it all blend beautifully.

The Muddle Makes the Magic

To bring out all the flavor, muddling is a must. Here’s where your cocktail truly comes to life:

  • Tear about 8 mint leaves into your shaker.
  • Add a generous amount of thin cucumber slices.
  • Pour in the lime juice and sugar or simple syrup.
  • Use your muddler (or the back of a spoon!) and get aggressive. You want to really press everything together to release those cucumber juices and mint oils.

Shake It Up

Once your mixture is muddled and aromatic, add:

  • 2 oz of white rum (Bacardi works great)
  • A handful of ice

Then, shake it well. The cold shaker and crushed ingredients blend together into a bright, fragrant base for your cocktail.

Style Your Glass

If you used a mandoline for your cucumber, here’s a fun trick: line the inside of your cocktail glass with cucumber slices. The natural moisture helps them cling to the glass and it looks gorgeous!

Fill your prepared glass with ice and strain in the mojito mix.

Top it Off & Garnish

Pour in your Topo Chico with lime (or any lime-flavored seltzer) to top it off. Garnish with:

  • A few extra mint leaves
  • A couple cucumber slices
  • Want to get fancy? Skewer some cucumber ribbons with a mint sprig for the rim.

Cucumber Mojito

A twist on a most refreshing cocktail of Mint, Lime, Topo Chico, Light Rum and the addition of muddled cucumber!

Equipment

Ingredients
  

  • 1 Med Cucumber
  • 10-12 Leaves Mint
  • 1 Juice Lime
  • 1 Tsp Sugar Or one tsp of Simple Syrup if you have it,
  • 2 Oz Light Rum Bacardi
  • 4 Oz Topo Chico with LIme You can sub regular Seltzer or other Lime flavored Seltzers

Instructions
 

  • Cut off ends of Cucumber and slice three slices for garnish and set aside
  • Using you mandoline slice the remaining cucumber in very thin slices-You can skip this step and just slice your cucumbers very thin and just use sliced cucumbers to garnish your drink
  • Using 4-6 slices line the inside of your cocktail glass – the moisture of the slices will adhere easily to the glass
  • In your cocktail shaker tear 8 mint leaves and add remaining cucumber, sugar and lime and muddle aggressively to release all the oils in the leaves and to juice the cucumbers
  • Add Rum and Ice and Shake well
  • Pour into prepared glass and top off with Topo Chico and garnish with remaining mint leaves and slices of cucumber
