Cucumber Mojito

A twist on a most refreshing cocktail of Mint, Lime, Topo Chico, Light Rum and the addition of muddled cucumber!

Equipment

Ingredients
  

  • 1 Med Cucumber
  • 10-12 Leaves Mint
  • 1 Juice Lime
  • 1 Tsp Sugar Or one tsp of Simple Syrup if you have it,
  • 2 Oz Light Rum Bacardi
  • 4 Oz Topo Chico with LIme You can sub regular Seltzer or other Lime flavored Seltzers

Instructions
 

  • Cut off ends of Cucumber and slice three slices for garnish and set aside
  • Using you mandoline slice the remaining cucumber in very thin slices-You can skip this step and just slice your cucumbers very thin and just use sliced cucumbers to garnish your drink
  • Using 4-6 slices line the inside of your cocktail glass - the moisture of the slices will adhere easily to the glass
  • In your cocktail shaker tear 8 mint leaves and add remaining cucumber, sugar and lime and muddle aggressively to release all the oils in the leaves and to juice the cucumbers
  • Add Rum and Ice and Shake well
  • Pour into prepared glass and top off with Topo Chico and garnish with remaining mint leaves and slices of cucumber
