  • 6 Spears Dill Pickle or 1 Avocado (sliced thin, 2 slices per Roll-Up)

Step-by-Step Instructions

1. Prepare the Spinach Wraps

Wrap the tortillas in damp paper towels and heat them in the microwave for 30 seconds (2 at a time). Alternatively, you can use a skillet following the package directions.

2. Build the Base

Spread 1/8 of cream cheese on each tortilla, followed by 1 tablespoon of Thousand Island Dressing.

3. Add Corned Beef and Sauerkraut

Place approximately two slices of corned beef on each tortilla, and sprinkle about 1 tablespoon of sauerkraut evenly.

4. Roll It Up

For the Reuben version, place a pickle spear in the center towards the bottom and roll up tightly. If using avocado, lay two slices side by side and roll up tightly.

5. Slice and Serve

Cut off the end pieces and discard. Slice the remainder into six one-inch slices. Refrigerate until ready to serve.
