Reubens are usually made on Rye Bread so I thought why not take mini cocktail rye bread and make little sandwiches? This is the perfect appetizer to serve on this holiday and it only takes minutes to prepare!

Ingredients

  • 1 Package Cocktail Rye Bread (Found by the Deli Counter)
  • 1 Bottle Thousand Island Dressing
  • 1 LB Corned Beef, Sliced Thin
  • 1 Jar Sauerkraut
  • 1 Package Swiss Cheese, Sliced Thin
  • 1/2 Stick Butter

  • 1 Baking Sheet

Instructions

1. Preparing Ingredients

  • Cut Corned Beef and Swiss Cheese: Cut your corned beef into squares to fit perfectly on your mini rye. Slice Swiss cheese into thin strips to get two strips per sandwich.

2. Assembly

  • Buttering the Bread: Lightly butter the bottom of the rye and place it on a baking sheet.
  • Layering the Sandwiches: Assemble sandwiches by spreading Thousand Island dressing on the bottom rye, then adding four or more slices of corned beef, two slices of Swiss cheese, and a tablespoon of sauerkraut.
  • Top It Off: Butter the outside of the top rye bread and spread a little Thousand Island face down on the top rye.

3. Baking

  • Baking Time: Bake at 375 degrees for 8 minutes, then flip them and continue baking for an additional 2-3 minutes.

4. Serving

  • Hot and Decadent: Serve the mini Reuben appetizers hot with a small bowl of Thousand Island for dipping.
  • Optional Garnish: For an extra touch, you can top them with a slice of pickle and secure it with a toothpick.
