Corned Beef Spinach Wrap Roll-Ups

Spinach wraps filled with Reuben goodness of corned beef, sauerkraut, thousand island dressing and a pickle or avocado slices to make the perfect St. Patrick's Day appetizer

Equipment

  • 1 Microwave Or you can heat wraps in a skillet according to package directions

Ingredients
  

  • 6 10.5 Oz Spinach Wraps Mission
  • 1 8 Oz Cream Cheese Room Temp
  • 1/2 Cup Thousand Island Dressing
  • 1/2 Pound Corned Beef Sliced Thin
  • 1/4 Cup Sauer Kraut Pat dry
  • 6 Spears Dill Pickle or 1 Avocado sliced thin-2 Slices per Roll-Up

Instructions
 

  • Wrap tortillas in damp paper towels and microwave for 30 seconds-2 at a time
  • Spread 1/8 of cream cheese on each tortilla
  • Spread 1 TB of Thousand Island Dressing on each tortilla
  • Place approximately two slices of corned beef on each tortilla
  • Sprinkle approximately 1 TB of Sauer Kraut on each tortilla
  • Place a pickle spear in the center towards the bottom and roll up tightly
  • If using Avocado instead place two slices side by side and roll up tightly
  • Cut off the end pieces and discard and cut the remainder in six one inch slices
  • Refrigerate until ready to serve
