Corned Beef Spinach Wrap Roll-Ups
Spinach wraps filled with Reuben goodness of corned beef, sauerkraut, thousand island dressing and a pickle or avocado slices to make the perfect St. Patrick's Day appetizer

6 10.5 Oz Spinach Wraps Mission 1 8 Oz Cream Cheese Room Temp 1/2 Cup Thousand Island Dressing 1/2 Pound Corned Beef Sliced Thin 1/4 Cup Sauer Kraut Pat dry 6 Spears Dill Pickle or 1 Avocado sliced thin-2 Slices per Roll-Up
Wrap tortillas in damp paper towels and microwave for 30 seconds-2 at a time
Spread 1/8 of cream cheese on each tortilla
Spread 1 TB of Thousand Island Dressing on each tortilla
Place approximately two slices of corned beef on each tortilla
Sprinkle approximately 1 TB of Sauer Kraut on each tortilla
Place a pickle spear in the center towards the bottom and roll up tightly
If using Avocado instead place two slices side by side and roll up tightly
Cut off the end pieces and discard and cut the remainder in six one inch slices
Refrigerate until ready to serve
