French Onion Bites with a Tomato Soup Shooter
If I had to pick my all-time favorite comfort food, grilled cheese and tomato soup would definitely be in my top ten! There’s something so cozy and nostalgic about dipping an ooey-gooey grilled cheese into a piping hot bowl of tomato soup on a cool day. That’s where the inspiration for this appetizer came from. I thought, “Why not turn this classic combo into a bite-sized treat?” And thus, the French Onion Bites with a Tomato Soup Shooter were born!
The idea actually came from a wedding I attended where several appetizers were served in shooter form. One standout was shrimp served in shot glasses, which I recreated in another post. This French Onion Grilled Cheese version is just as cool and even more satisfying—because it’s not just any old grilled cheese, but a flavor-packed French Onion Grilled Cheese!
What makes these bites truly special is the caramelized onions that top Swiss and Gruyere cheese. Instead of basic American cheese, these rich flavors come together in a crispy, buttery sandwich that’s perfect for dipping into your favorite tomato soup. It’s the ultimate indulgence, just in appetizer form!
So, without further ado, let’s dive into how you can make these delicious French Onion Bites with a Tomato Soup Shooter for your next gathering!
The Secret to Perfect Caramelized Onions
The heart of this recipe lies in the caramelized onions. Don’t worry—it’s easier than you think. You’ll slowly cook the onions in butter with fresh thyme until they turn a golden brown. To elevate the flavor, finish them off with a splash of red wine, Worcestershire sauce, and a bit of salt and pepper. The result? Intensely flavorful onions that pair perfectly with Swiss and Gruyere cheese.
How to Caramelize Onions
- Start by melting unsalted butter in a pan.
- Add thinly sliced yellow onions and cook on medium-low heat for about 45 minutes, stirring occasionally.
- Once the onions reach a deep golden color, add red wine, Worcestershire sauce, fresh thyme, and season with salt and pepper.
- Cook for an additional 10 minutes until the wine reduces and the onions turn a rich brown.
Building the Perfect French Onion Grilled Cheese
Now that you’ve got those decadent onions ready, it’s time to assemble the sandwich.
Butter slices of sourdough or Italian bread, and layer them with Swiss cheese, your caramelized onions, and a sprinkle of shredded Gruyere.
Fry the sandwich to golden perfection, with the cheese melting beautifully inside.
