Cut your corned beef in squares to fit perfectly on your mini rye
Slice swiss cheese in thin stripes to get two stripes per sandwich
Lightly butter bottom of rye and put on baking sheet
Assemble sandwiches by first spreading thousand island dressing, then four or more slices of corned beef, two slices of swiss cheese and a TB of sauerkraut
Butter outside of top rye bread and spread a little thousand island face down on top rye
Bake at 375 degrees for 8 minutes then flip them and continue baking for 2-3 additional minutes
Serve hot with small bowl of thousand island to dip
