Mini Reuben Sandwiches

A St. Patty's Day tradition in a mini reuben filled with all the traditional fixings.

Equipment

  • 1 Baking Sheet

Ingredients
  

  • 1 Pkg Cocktail Rye Bread Found by the Deli Counter
  • 1 Bottle Thousand Island Dressing
  • 1 LB Corned Beef Sliced Thin
  • 1 Jar Sauer Kraut
  • 1 Package Swiss Cheese Sliced Thin
  • 1/2 Stick Butter

Instructions
 

  • Cut your corned beef in squares to fit perfectly on your mini rye
  • Slice swiss cheese in thin stripes to get two stripes per sandwich
  • Lightly butter bottom of rye and put on baking sheet
  • Assemble sandwiches by first spreading thousand island dressing, then four or more slices of corned beef, two slices of swiss cheese and a TB of sauerkraut
  • Butter outside of top rye bread and spread a little thousand island face down on top rye
  • Bake at 375 degrees for 8 minutes then flip them and continue baking for 2-3 additional minutes
  • Serve hot with small bowl of thousand island to dip
