Edamame Dip
Your new favorite substitute for Hummus - A blend of Edamame Beans , Asian Flavors to give it a Umami Punch and brightness from Lemon and Lemon Zest!

- 2 Cups Frozen Edamame Beans One Bag equals 2 cups - Make sure to buy beans out of the pods
- 1/3 Cup Reserved Water from boiling Beans
- 2 TB Fresh Lemon Juice
- 1 Tsp Lemon Zest
- 1 TB Soy Sauce
- 1 TB Hoisin Sauce
- 1 Tsp Fish Sauce
- 1 Tsp Grated Ginger
- 2 Cloves Garlic Chopped
- 1/2 Tsp Salt and Generous Fresh Black Pepper
- 1 Tsp Sesame Seed Oil
- 1/4 Cup Olive Oil
Boil 4 Cups of Water and add Bag of Frozen Beans with l Tsp of Salt - Boil for 6 minutes
During the last minute reserve 1/3 Cup of the Water from the Beans
Drain Beans and add to Food Processer with all the above ingredients
Juice your Lemon First then use same lemon to get about a tsp of Zest and add to above ingredients.
Blend in the Food Processor or a Blender until smooth
Serve with Pita Crackers, Sesame Crackers and an array of fresh veggies to offer an interesting and beautiful spread - Enjoy!
