Garden Cucumber Bites
The best part of summer is when the garden starts to come in! Nothing’s better than a fresh-picked cucumber or tomatoes plucked right from the vine! Oh, and of course the boundless ways to use all the basil are in my nightly dreams. So after a day of picking my beautiful veggies, I came up with the fresh and super easy appetizer — the Garden Cucumber Bites!
This truly is the easiest and most unfussy appetizer you can serve, but isn’t that what summer is all about? Easy-peasy, light, fresh, and delicious is what you get from these little bites. If you don’t have a garden, you can simply go to your Farmer’s Market or just stop in the produce section and easily find everything you need.
Literally in five minutes you’ll have a plate ready to serve on a hot summer day with a nice Ranch Water cocktail — or simply an ice-cold glass of Pinot Grigio sounds scrumptious to me!

I grew two different kinds of cherry tomatoes to add some color variety — an easy trick to make your plate look even more enticing.
And let’s not forget the basil. If you’re lucky enough to have basil in bloom, don’t toss the flowers!
Those delicate little tops aren’t just bee-friendly pollinators — they’re edible and absolutely lovely in both salads and appetizers like this. If you don’t have basil flowers, no worries. A small basil leaf works just as beautifully.






Make It Easy (And Fancy If You Want!)
To keep this appetizer effortless, start by letting your Boursin cheese come to room temperature. This step is key if you want to pipe it onto the cucumber slices. If not, no stress — just spoon a small dollop right on top. It’s rustic and still gorgeous.
Then, top each cheesy cucumber round with half a cherry tomato — stand them upright for the best presentation. A touch of basil flower or a small basil leaf finishes each one off with a fragrant, summery note.

Garden Cucumber Bites
Equipment
- 1 Piping Bag Not mandatory you can use a teaspoon and spoon the cheese on instead
Ingredients
- 2 Small Cucumbers
- 6 Cherry Tomatoes I used different colors
- 6 Basil Flower Tops Or you can use Small Basil Leaves instead
- 1 Container Boursin Cheese Bring to Room Temp
- Reduced Balsamic Vinegar To Drizzle over the top
Instructions
- Slice cucumbers in even slices about 1/3 of an inch thick
- Pipe a Star of Cheese on each Cucumber then top with half of a Cherry Tomato and a bit of the Basil Flower
- Drizzle Balsamic Vinegar over the finished Bites
