Plum & Ginger Gin Sour

A delightful cocktail for the Chinese New Year - A mix of Plum, Ginger and Empress Gin mixed with a touch of lemon to create an delicious sour

Equipment

Ingredients
  

  • 8 Oz Plum Jam*
  • 1/4 Cup Sugar
  • 1/4-1/2 Cup Water
  • 2 Inch Piece of Fresh Ginger sliced

Cocktail

  • 2 Oz Empress Gin
  • 1 Oz Fresh Squeezed Lemon Juice Save skin to make twist to garnish
  • 1 Oz Plum Simple Syrup
  • 1 Oz Aquafaba Water from can of Chick Peas

Instructions
 

  • Make simple syrup by mixing Plum Jam, Sugar, Water and sliced Ginger in a sauce pan
  • Bring to a low boil then turn down heat and simmer for 15 minutes
  • Muddle the ginger slices as the syrup cooks - you may need to add additional water so the consistency stays like syrup - strain through a fine mesh sieve and cool

Cocktail

  • Add Gin, Simple Syrup, Fresh Squeezed Lemon Juice and Aquafaba to a cocktail shaker with no ice
  • Shake very hard for 40 seconds
  • Add ice and re shake for 30 seconds then pour into glass and garnish with a lemon twist

Notes

*Found at your ethnic market - use alittle over 1/2 jar to make 4 cocktails
