Irish Tater Tot Bites

Corned Beef, Swiss Cheese, Sauerkraut and pickles nestled between two Tater Tot Rounds and dipped in Thousand Island Dressing to make the perfect St. Patty's Day bite!

Equipment

  • 1 Foil Lined Baking Sheet
  • 12 Tooth picks to secure the Tots

Ingredients
  

  • 24 Tater Tot Rounds The flat kind to mimic a bun
  • 12 Thin Slices Corned Beef
  • 12 1 Inch Slices of Swiss Cheese or Grated Swiss Cheese
  • 1/4 Cup Sauer Kraut
  • 12 Dill Pickle Chips
  • 1/4 Cup Thousand Island Dressing To use as Dip

Instructions
 

  • Cook Tater Tots according to package
  • Assemble Bites by adding one piece of corned beef that has been folded into a one inch piece
  • Top next with a small slice of Swiss Cheese and put assembled tots under the broiler for one minute to melt the cheese
  • Top melted tots with a bit of Sauerkraut and a Pickle Chip then the remaining top Tater Tot and secure with a toothpick
  • Pour Thousand Island Dressing in a small bowl to serve as Dip for the tots
