Champagne Jello Shots

A yummy and fun twist on a classic jello shot. A mix of Champagne, Vodka, lemon, sugar and unflavored gelatin served in a plastic champagne glass for the most fun and festive addition to your New Year's night!

Servings 12 or up to 20 depending on how many cubes you put in each glass

Equipment

  • 1 Pyrex Baking Dish
  • 1 Sauce Pan

Ingredients
  

  • 3 Cups Champagne
  • 1 TB Fresh Squeezed Lemon Juice
  • 1/2 Cup Sugar
  • 4 Envelopes Unflavored Gelatin 1 Box
  • 1 Cup Vodka

Instructions
 

  • Combine Champagne, Lemon Juice and Sugar in a medium sauce pan
  • Heat over Med-Low whisking constantly until sugar dissolves-do not let boil
  • Add Gelatin and whisk until dissolved*
  • Add Vodka and whisk - Do Not let this mixture boil
  • Pour into 9 x 13 pyrex pan and refrigerate over night**
  • Cut into bite size cubes and put at least three in each glass

Notes

*if it clumps just keep on heating or use back of spoon to dissolve the lumps
**Can refrigerate for a few days
If it's a small party you can fill each glass and guests can eat a few at a time from their glass
